My eldest son now lives in Melbourne, Australia. We phone each other every week and one question he always asks is “Can you send me the recipe for……?” or “How do I make……..?” usually referring to a dish I made when he was a child. So I give him the recipe over the phone, he cooks the dish but loses the recipe and has to ask for it again. So I’ve decided to make life easier for myself and to create a permanent record for him.

The first Family Favourite is Spaghetti Cheese. This is an adaptation of a traditional Italian dish – Quattro Formaggio – pasta with four cheeses. This very simple recipe is below, but there are no precise amounts or ingredients for this recipe – just use whatever you have to hand.

SPAGHETTI CHEESE

Cook pasta (macaroni, spaghetti, fusilli, tagliatelli etc) in boiling salted water until al dente (i.e., still has a slight bite to it).

Drain well and return to pan.

Stir in grated cheese and mix together well. Use either just one type of cheese, e.g., cheddar or emmenthal, or a mixture of any cheeses you have available. I made this yesterday with two parts cheddar to one part gorgonzola – delicious!
